When Americans mention "Belgian waffles," they often refer to a simplified version of the Brussels waffle, while the Liège waffle (pronounced “LEE-AGE”) originates from eastern Belgium. Unlike the lighter Brussels waffle, Liège waffles are richer, denser, sweeter, and chewier. Created in the 18th century by the chef of the prince-bishop of Liège, these waffles feature pearl sugar chunks that caramelize when baked, offering a unique texture and flavor.
